Black rice: the dark dish that hides a flavor as deep as it is mysterious... Perfect for a Halloween feast.


 

Black rice is one of the culinary jewels of the Spanish Levant, especially popular in regions like the Valencian Community and Catalonia. Its dark color comes from squid or cuttlefish ink, an ingredient that, in addition to giving it its characteristic appearance, imparts an intense and deep marine flavor. Although it shares a technique with paella, black rice is distinguished by that unique touch that makes it an unmistakable gastronomic experience.


Historically, black rice has its roots in coastal areas, where the abundance of seafood and cephalopods allowed fishermen to create tasty dishes with simple ingredients.
