DIFFERENCE BETWEEN I.G.P. AND D.O.P. OF A HAM

The main difference between Protected Geographical Indication (I.G.P.) and Protected Designation of Origin (D.O.P.) for ham is the location of the production phases. In a D.O.P. product, all production phases, from raising the pig to curing the ham, must take place in the same geographical area. In contrast, for I.G.P., only one of these phases is required to occur in that area.

The D.O.P. identifies products originating from a specific region, whose quality is due to particular conditions of the place, such as climate and human factors. In Spain, there are four D.O.P.s for Iberian products: Guijuelo, Los Pedroches, Dehesa de Extremadura, and Jabugo. Additionally, there is the D.O.P. Jamón de Teruel, awarded to hams from white pigs raised in Teruel. This ham and the Paleta de Teruel have distinguishing features such as the preservation of the hoof, an inviolable seal, and a traceability code that ensures their quality and origin.

Protected Geographical Indication (I.G.P.) highlights the relationship between a geographical region and the name of a product, based on its quality, reputation, or other characteristics. Unlike the D.O.P., in the I.G.P., at least one of the production stages must occur in the same area. For white layer hams, there are two I.G.P.s: Jamón de Trevélez and Jamón de Serón.

Despite the clear difference between I.G.P. and D.O.P. for ham, both classifications provide protection to safeguard different types of products whose quality is linked to their geographical origin.
