The first training and research center dedicated exclusively to the world of ham is an innovative multidisciplinary project that allows industry professionals to expand their knowledge. It is called the Ham Campus.
Equipped with unique facilities, this versatile space is open to knowledge and the participation of all professionals in the sector. With more than 1,200 m² of facilities, in addition to over 10,000 m² of Monte Nevado curing cellars, the Campus has a capacity for more than 250 people. It serves as a unique forum where artisanal knowledge, technology, and research on ham come together for the first time. In this unparalleled setting, Monte Nevado offers its vast experience, accumulated over more than 125 years in the ham world, to current and future professionals in the sector. The campus includes various learning and exhibition facilities:
The Cutting Room, with a capacity for 24 people, allows attendees to learn and perfect a highly demanded skill in retail and catering. The facilities include steel tables with waste disposal outlets, a professional ham holder per table, an audiovisual system, and a tool gallery to study the anatomy of ham. The courses cover knife cutting, plating, and professional machine cutting.
The Sensory Tasting Room, with a capacity for 62 people, is designed to train attendees in organoleptic characteristics and conduct tastings and pairings. It is connected to the Showcooking Space. The facilities include tasting tables, access to Showcooking, and an audiovisual system. The courses cover organoleptics, sensory factors, and tasting and pairing methodology.
A spectacular Professional Showcooking Space where chefs and students/attendees interact in the creation and innovation of recipes. The facilities include a fully equipped kitchen, an open area for viewing classes, and access to the Tasting Room. The courses cover culinary fundamentals with cured products, traditional and creative recipes, and hospitality methodology.
A spectacular cellar exclusive to the Campus, with natural conditions, allows for the curing and preservation of over 7,000 pieces of ham. The facilities include a space for tastings and hands-on activities, a central area for viewing, and access to the Monte Nevado cellars. The courses cover Ham Master training, external characteristics of ham, curing, and testing, combining theory and practice.
Additionally, the Monte Nevado Ham Campus features various types of facilities such as an auditorium, an exhibition display room, and different curing cellars for its various types of ham. It is the only campus in the world dedicated exclusively to this wonderful product called ham.
